From the Kitchen: Garlic Gravy Chicken (low carb)
This is one of those simple meals that comes together quickly but tastes like you spent much more time on it. With just a handful of ingredients and one skillet, you end up with tender chicken and a rich, savory garlic gravy that’s hard to beat.
Ingredients
4 boneless, skinless chicken thighs
(chicken breast works as well)Salt
Black pepper
Garlic powder
Olive oil
About 1 cup chicken broth
Instructions
1. Heat the skillet
Heat a skillet over medium-high heat. An iron skillet works especially well for this recipe.
Add a generous drizzle of olive oil to prevent sticking.
2. Sear the chicken
Rinse and pat the chicken dry.
Place chicken in the hot skillet and season generously with salt, pepper, and garlic powder.
Cook for 2–3 minutes, then turn and season the other side.
Cook another 2–3 minutes.
3. Add broth and simmer
Pour in enough chicken broth to cover the bottom of the skillet (about 1 cup).
Reduce heat to medium-low and cover with a lid.
Let cook until the chicken is tender and cooked through.
4. Reduce to gravy
As the chicken cooks, the broth will reduce and form a light garlic gravy.
5. Serve
Plate the chicken and spoon the gravy over the top.
Notes
This dish comes together in about 30 minutes and uses just one pan, making cleanup easy.
The gravy forms naturally as the broth reduces — no thickener needed.
Serve with roasted vegetables for a low-carb option, or with mashed potatoes or rice if desired.
