From the Kitchen: Malaysian Golden Coconut Chicken

A rich, golden coconut sauce, tender chicken, earthy mushrooms, and just enough warm spice to make this one a keeper!

Coconut milk, turmeric, ginger, and garlic are a combination worth getting acquainted with! These ingredients are commonly found in Malaysian cooking, where fragrant spices and creamy coconut sauces create dishes that are comforting, flavorful, and beautifully aromatic.

For today's From the Kitchen, I decided to try my hand at a Malaysian-inspired chicken dish. And after a little experimenting at the stove, I ended up with a supper that earned an impressive 4.5 out of 5 stars!

A Little Taste of Malaysia

Malaysia is home to a wonderfully diverse food culture, influenced by Malay, Chinese, Indian, and other culinary traditions.

One dish that caught my attention was Ayam Masak Lemak, a Malaysian preparation featuring chicken cooked in a rich coconut-based sauce. Traditional variations often include ingredients such as turmeric, lemongrass, and chilies, with some versions incorporating sour ingredients to balance the richness.

My version takes inspiration from that style of cooking, but it isn't intended to be an authentic reproduction.

I wanted a mild, savory chicken dish with plenty of vegetables and a creamy sauce. Mushrooms and zucchini sounded like wonderful additions, and I already knew I wanted to serve it over hearts-of-palm rice to keep my supper lower in carbohydrates.

Making It My Own

I started by browning the chicken thighs in my Dutch oven, then removed them while I cooked the onions and mushrooms together. The mushrooms released their moisture, and as that cooked away, they developed a lovely flavor.

Next came the ginger, garlic, turmeric, coriander, and cumin.

The turmeric gave everything a beautiful golden color, and once I added the coconut milk and coconut cream, I had the beginnings of a rich, fragrant sauce.

I returned the chicken to the pot and let everything simmer gently, adding the zucchini toward the end so it wouldn't become too soft.

But as I tasted the sauce, I thought it needed just a little something more.

One teaspoon of mild curry powder made a noticeable difference.

Then, after tasting the finished dish, I decided to try approximately one teaspoon of lemon juice.

That little splash brightened the sauce and balanced the richness of the coconut cream beautifully!

Sometimes it's those small adjustments that turn a good recipe into a really good one.

The Recipe: Golden Coconut Chicken with Mushrooms & Zucchini

This is the double batch I prepared, with plenty for leftovers.

Ingredients

  • 4 pounds boneless, skinless chicken thighs, cut into approximately 2-inch pieces

  • 2 teaspoons salt, for seasoning the chicken

  • 1 teaspoon black pepper

  • 2 tablespoons olive oil

  • 2 medium yellow onions, diced

  • 16 ounces fresh mushrooms, sliced

  • 2 medium zucchini, cut into thick half-moons

  • 3 tablespoons ginger paste

  • 2 tablespoons garlic paste

  • 1 tablespoon ground turmeric

  • 1 teaspoon ground coriander

  • 1 teaspoon ground cumin

  • 1 teaspoon mild curry powder

  • 1 can (approximately 13.5 ounces) unsweetened coconut milk

  • 1 can (approximately 13.5 ounces) unsweetened coconut cream

  • ½ cup chicken broth

  • Additional salt, to taste

  • Approximately 1 teaspoon lemon juice

  • Cornstarch mixed with cold water, as needed to thicken the sauce

Instructions

  1. Brown the chicken. Season the chicken pieces with salt and pepper. Heat the olive oil in a large Dutch oven over medium-high heat. Brown the chicken in batches, then remove it to a plate. The chicken does not need to be completely cooked at this stage.

  2. Cook the vegetables. Add the diced onions and sliced mushrooms to the same pot. Cook until the onions soften and the mushrooms release their moisture. Continue cooking until much of that liquid evaporates.

  3. Add the aromatics and spices. Stir in the ginger paste, garlic paste, turmeric, coriander, and cumin. Cook briefly, stirring, until fragrant.

  4. Make the coconut sauce. Pour in the coconut milk, coconut cream, and chicken broth. Stir well, scraping up any flavorful browned bits from the bottom of the pot.

  5. Simmer the chicken. Return the chicken and its juices to the Dutch oven. Bring the sauce to a gentle simmer, cover loosely, and cook until the chicken is tender and reaches an internal temperature of 165°F.

  6. Add the zucchini. Stir in the zucchini during the final 7–10 minutes of cooking, allowing it to become tender without falling apart.

  7. Finish the seasoning. Stir in the mild curry powder and taste for salt. If you prefer a slightly thicker gravy, add a small amount of cornstarch slurry and simmer briefly until the sauce reaches your desired consistency.

  8. Brighten the sauce. Stir in approximately 1 teaspoon of lemon juice. Taste and adjust the seasoning if needed.

  9. Serve. Spoon the chicken, vegetables, and golden coconut sauce over your choice of rice.

Serving Suggestions

I served mine over hearts-of-palm rice, which is one of my favorite lower-carb alternatives to traditional rice.

However, this dish would also be delicious served over jasmine rice, basmati rice, or cauliflower rice.

The sauce is especially good spooned generously over whatever you choose!

My Verdict: ⭐⭐⭐⭐½ — 4.5 Out of 5 Stars!

This one surprised me!

The sauce was creamy and rich without having an overpowering coconut flavor. Instead, the warm spices came through beautifully, complemented by the mushrooms, tender chicken, and zucchini.

The curry powder gave the gravy an extra layer of flavor, while the lemon juice provided just enough brightness to bring everything together.

I originally thought this was a solid four-star dish, but after that final addition of lemon juice, I raised my rating to 4.5 stars!

And considering how rarely I hand out five stars, that's quite a compliment.

Would I make it again? Absolutely!

This is the kind of comforting, flavorful supper that makes experimenting with unfamiliar recipes so enjoyable. And with a double batch, I'll have more to enjoy later!

Until next time, happy cooking from my kitchen to yours!
