From the Kitchen: Summer Garden Chicken Quiche (low carb)

It's often too hot in the summer to cook a full meal, so this quick and easy quiche got me in and out of the kitchen without heating up my house too badly.

Loaded with fresh summer squash, carrots, green beans, tender rotisserie chicken, and plenty of cheese, this crustless quiche is a hearty supper, but also great for a reheated breakfast or lunch the next day.

One of my favorite things about crustless quiche is how versatile it is. Change the vegetables, switch the protein, or use a different cheese, and you've created an entirely new meal.

Don't tell anyone, but I treated the Chihuahuas to a serving, too. They were SO happy with their supper tonight!
